So, last night I got home and found that we had four very, very brown bananas. Obviously they needed using up but couldn't be eaten on their own. Naturally, I thought of banana bread. I've never actually made banana bread before, but that's not going to stop me!

C and I found a recipe that was a Banana and Apricot Tea Loaf and called for two bananas and dried apricots. We do have dried apricots, but as we had twice as many bananas as the recipe required, it was generally decided to leave out the apricots (which, seeing as I really dislike them, I was happy about!). Anyway, the resulting banana bread loaf is GORGEOUS! And yes, it deserves capitals! It's slightly crunchy on the outside, and soft and moist and dense on the inside.

I had two slices with butter for breakfast. Yummy, yum, yum! Much better than the disaster that was my chocolate cookies that turned out like those biscuits you have with coffee - very small and very hard! Okay, they were edible and nice, but not what they were meant to be! Turned out I'd used granulated sugar instead of caster sugar and hadn't creamed the sugar and butter together enough (which would have been a lot easier had I used caster sugar, but we didn't have any - used granulated again in the banana bread and it didn't make any difference this time). But my banana bread is a rip-roaring success! If there's any left by the time I get home, I'll take a photo! (And post the recipe.)

Omg my flatmate Jo also had brown bananas and made the most amazing banana cookies, they sound just like mini versions of your loaf! They are completely ruining my gym achievements! Lol. Banana = v.g. Kx

Lol! Yay for brown bananas! My banana loaf is ruining my willpower, but I did have a healthy dinner last night (pasta and red pesto on a small and then an ice lolly (and then a small slice of banana loaf - hmm, not very healthy after all, but smaller portions than of late, hurray!).

It was! I was very impressed, especially since it was luck that I pulled it out of the oven in time. It was due to have ten more minutes, but I looked at it and, being the nosy person that I am, I pulled it out and poked it with a knife.

It turned out with just the right amount of density and moistness - things never turn out that good for me when I'm baking! I can do savoury, but sweet stuff is always touch and go!

Well, now that I think about it, in all seriousness, my housemate posted some cakes and things out to her nephews in Virginia and they're still alive! *g*

So, it is actually possible! *g*

Oh no! Don't you start titling every post with "... goodness" as well! It's out to get me! I'm getting worried about walking down the street at night and being accosted by goondess jumping out of side alleys.

PS The cake sounds amazing - I'll have to try it sometime *g*.

Lol! I never even noticed!! *g* Oops! Sorry! (I can just imagine someone dressed in a grey cape (to blend in the background, of course) with a large 'G' in the middle of their chest, waiting behind a corner to leap out and regale you with how 'goodness' is a perfectly perfect word and should be used more often! Oh my goodness! *g* ;)

I must remember to post the recipe tonight, and take some photos. I'm going to try and convince my computer that it wants to go online, which will make life easier. :)
