Banana bread recipe
May. 11th, 2007 08:49 amOkay, so it's a wee bit late, but here's the recipe for the banana bread I've been raving about!

First of all, the 'real' recipe, which is for Banana and Apricot Tea Bread [serves 10]
8 oz/225 g self-raising flour
Pinch of salt
4 oz/100 g unsalted butter
4 oz/100 g caster sugar
2 bananas, peeled
4 oz/100 g dried no-soak apricots, chopped
2 eggs, beaten
Sift the self-raising flour and salt into a bowl. Rub in butter with fingers until the mixture reaches the breadcrumb stage. Stir in sugar. Mash bananas thoroughly and add to bowl with apricots and beaten eggs and mix to give a soft dropping consistency.
Spoon into a greased and lined 2 lb/900 g loaf tin and smooth over the top. Bake at Gas 5/375 F/190 C for 1 hour or until a skewer comes out clean.
Cool and remove the bread from tin before serving.
Now for what I did!

3 very soft bananas, peeled
2 large eggs, beaten
Dump the self-raising flour and salt into a bowl. Rub in butter with fingers until the mixture reaches the breadcrumb stage. Stir in sugar. Mash bananas thoroughly and add to bowl with beaten eggs and mix until everything is smooth and gives a soft dropping consistency.
Spoon into a greased and lined 2 lb/900 g loaf tin and smooth over the top. Bake at Gas 5/375 F/190 C for 1 hour or until a eating knife comes out clean.
Cool and remove the bread from tin before serving (it's really nice with just some butter spread over the top).
